BAKED CANADIAN BACON

6 - 7 pound piece of Canadian bacon
1 cup brown sugar
½ tsp dry mustard
1 tbsp d'Oni Bold As Love mustard (may be replaced with a Creole mustard)
1 tbsp flour
Whole cloves
Cognac

  1. Moisten dry ingredients with the cognac to paste consistency.
  2. Cut diamond pattern in fat side of the bacon & place a clove in each diamond.
  3. Bake about 1 ½ hours at 300 degrees.
  4. Remove and pat one half of the paste mixture over the top surface.
  5. Return to the oven & cook for another 15 minutes.
  6. Remove & again coat with the remainder of the paste.
  7. Bake for another 15 minutes.
  8. Slice & serve hot or cold.

This is very nice with rye bread.
